Founded in 1994 by the Vivanco family, this brand has its roots deeply embedded in the rich red earth and dry air of Arandas, Jalisco, where the magic unfolds.
Under the guidance of five generations of the Vivanco family, only the finest specimens of Agave Azul Tequilana Weber are selected, aged between six and eight years. Carefully harvested by skilled jimadores, these agaves are the heart of Viva Mexico Tequila Blanco. Their expertise and dedication are acknowledged as an art form in the world of Tequila production.
Slow cooking in stone ovens ensures uniformity in the plant's cooking, initiating the conversion of carbohydrates into sugars. This process not only prepares the agaves for extraction but also imparts a distinct flavor profile. The masonry ovens house the agaves for 48 to 50 hours, a stage cherished by Tequila enthusiasts for its contribution to the spirit's character.
In the extraction process, the cooked agaves are pressed to separate the pulp from the sweet nectar known as MOSTO (fresh must). The pulp goes to compost, while the must patiently awaits its turn for fermentation in stainless steel tanks.
After fermentation, the Tequila undergoes double distillation: first, distillation and then rectification. The first distillation separates the ordinary from the unusable alcohols, while the rectification further purifies the Tequila, revealing its true essence.
Patience is key, Viva Mexico rests in oak barrels under controlled conditions of humidity, temperature, and light exposure. Here, it evolves, absorbing an array of aromatic notes and flavors, unique to Tequilas crafted with such care.
Made from highland agaves of Jalisco aged 6 to 8 years, slow-cooked, fermented for a minimum of 120 hours with the soothing sound of classical music, double-distilled in copper stills.
Aging: An average of 18 months in American oak barrels
